It looks like the culprit of the issue is within Jotform instead of Trello. Trello's text editor uses a version of the MarkDown language for text formatting, so any raw content that is set in each card's description will be formatted according to MarkDown syntax.
While our email-to-board feature hasn't been updated in some time and it isn't designed to cover all formats, the email itself should conform to the format that Trello expects.
I've also seen a few similar reports concerning Jotform so, sadly, it's not specific to your emails only. It might be worth reaching out to Jotform about this (though, it's unlikely they'll make a change just for Trello).
I understand this may not be the answer you hoped for, but I hope this brings a little more clarity to the matter.

Is there anyway to change how Trello recieves email to board data? I checked with Jotform and it looks like emails are HTML instead of plain text.

Thanks for the update on this!
We actually have it as an open feature request for the product team to consider! I'll add you as an official "+1" in support of this. But sadly, our team is currently prioritizing many other projects, and this one isn’t likely to be added to our roadmap in the near term.
