I am very happy so far with the app. I have a question:
Within the cards, when one uses checklists, is there somewhere within Trello where you can see a general detail of all the checklists marked as completed and with the date on which they were marked as completed?

Interesting question, sadly there isn't option like this in Trello. Automation rule for checklist does contain one option like:
Trigger - when the
Item name - item is checked by me
Other than that there are no actions that are related to dates directly.

I imagined it would not be available because it was so specific.
In my case, it is important for me to keep track of what I do by day.
Right now I'm using 3 lists for each (target) board:
"To begin", "In progress" and "It is done"
Is there a way to have the "It's Done" cards organized by date they were completed?

You can filter the completed cards with the "Mark as complete filter". In Trello, this would be possible if there is a similar feature like JQL in jira where you can order by the ascending or descending order, which is not available in Trello.
