Does anyone have any idea why some of my cards move from list to list on their own?

I'm afraid Trello is only recording what has happened.  There are three broad possibilities here:

• You moved the card
• Someone else using your account moved the card
• A computer moved the card, with an automation either within Trello or an external system.  It used your credentials to do it, or it had admin access at a level that it could impersonate you.

Just to elaborate, I'm using Pleexy to sync my assigned cards and checklists to Todoist...and the default was to move the completed card to the last list...so I've turned that off.
