Hey, Blake, and welcome! Trello is a great option for project management/tracking, and it has truly been a saving grace for my needs!

When signing up for Trello, you get a truly free trial of Trello Premium. You don't need to provide any payment information, so there is no possible way for you to be charged when the trial expires if you choose not to provide it. It's one of the few products with that option. So it's a great way to see what Trello is all about.
Trello also has a free tier with many of the same features.
That is, unless you want Trello Enterprise, which has a minimum starting point of $10,000 and is recommended for 50+ users. If that's what you're looking for, you have to contact sales anyways. I'm not sure, but they may do product demos.
There are plenty of free videos/articles that provide demonstrations of Trello available online, as well, made by other users, as well as lots of support documentation from Atlassian. There are many companies who will demo Trello for you.
