We would like to be able to see the fix version release date on the issue view page. However, since release date isn't an independent field (it's a field within fix version) we can't add it to the issue view screen. How might we go about doing this?

You don't/can't (not easily anyway). I work around this by also putting the date in the in the name of the release. E..g.:
- "Amstel" (Thu, 21 Jun)
- "Becks" (Thu, 5 Jul)
- "Carlton" (Thu, 12 Jul)
I realise this is "redundant data"; but it achieves the outcome real quick. If you're working in a jira instance containing dozens or hundreds of projects it might be worth putting the Project or System name infront of the release name also. Hope this helps!

OnDemand, doubtful. Hosted Jira, you could have used a scripted field.
