why is it that after replying to one post i am receiving emails about questions i am not interested in?

I suspect it suggested that you follow one of the labels that the question had been tagged with, and you clicked "yes" (I keep doing it too)

To check this, click "Topics" above the question.  The page will display what you've followed, and gives you "unwatch" next to it, so if my guess is right, you can unwatch the ones you aren't interested in.
