The JEMH Plugin lists auto-workflow advance as an offered feature. Does this mean I can configure JEMH to automatic advance an issue in a workflow after a set amount of time (an amount I can set?)?

The workflow feature advances issues one step on creation, e.g., to In Progress etc. Management of issue state, with timeouts isn't yet a feature, but does fit into the JEMH as a Helpdesk enabler bubble. I just logged https://thepluginpeople.atlassian.net/browse/JEMH-1461 for this.
