You can't.

The add-on provides new custom field types that are not the same as the built-in custom fields.  Those can have their options updated over REST, but they're not the core Jira fields.

You'd have to swap your existing custom fields over to the new types.

Install the add-on, create the new fields you want, then have a look at the docs for the add-on - the calls are documented and there are some examples.
