Its my understanding that Add-Ons in the JIRA Cloud runs outside JIRA in another environment (see conceptual figure)
It this correct? And if so - what about SLA/Uptime for these Apps? Are they Atlassian covered or...?
Scriptrunner is a great example - a fantastic plugin, but if the above is true, does Adaptavist have a SLA?

Your logic is correct. The marketplace apps are not covered by Atlassian (unless it happens to be an Atlassian app, e.g. Automation for Jira or Portfolio for Jira).
Each marketplace vendor will have their own SLAs, if at all, so you will need to speak to each individual vendor about if it isn't publicly published.
