For us the Start Date and Due Date are not showing up. We do get a flag that represents the due date but that's about it. I'm sure I am doing something wrong. Any help would be appreciated. Thanks.

In the case of Server/DC version (If you use Cloud, you can't use this option),
please access to Gantt configuration (on the top right of Gantt-view)> Issue view and click Edit link of issue type, so you can see Issue view configuration to specify Start date/Finish date.
