We have requirement like When Epic is created in parent project automatically Stories need to be created in child projects. For example there is 'A' parent project and 'B', 'C', 'D' ,'E' and so on child stories .Here if we create Epic in project-A then automatically need to created stories in child projects 'B', 'C', 'D'. In Automation rule is there any chance to select multiple projects

Basically, you will create multiple actions for Create issue - one for each project B, C, and D.

This is the screenshot of Rule. Exactly the requirement is When an Epic is created in one board i.e. project-A then it has to automatically create stories in child projects B,CD etc.,
Can we customize the rule so that Epic created in A it should create Story only in B&C but not in D etc and another in D&E but not in B&C or vice versa. Is it possible to obtain such scenario. Automation rights are with Jira Admins only once the rule is created the project owners or managers can not edit the rule

Sure, you can do that.
Add another Condition after your first condition, but us an If/Else Block Condition. In that condition add the Project = ITC Technology-Vector
And so on - see my example below.
