This is not possible without any plugins if you want to map the fields from the email to an issue in Jira. I am using the plugin Email this issue in which you can use to fetch information from the subject field, sender address, the email body (you can use regex if the email is pre-defined, otherwise it will be hard to make the regex checks work everytime). This will also allow you to set specific fields in Jira from the email.
But as I said in the beginning, this is not possible in the standard Jira since all the information goes to the Summary and description field.
