I have come across a scenario where a scrum team, using a scrum board have got it configured such that it uses the workflow statuses aligned to their definition of done for a sprint (i.e. develop, QA, In review, Done etc.) where the transition to the status Done sets the resolution and resolution date
Outside the sprint, the team often ends up collecting a bunch of stories completed over 1-2 sprints and those stories go through UAT testing, Beta testing etc. - to track the movement of this work, we are planning to configure a separate Kanban board for the team to manage this process; however we want to ensure that the transition of workflow from Done to some other status, does not end up resetting the resolution flag and resolution date - is this possible technically?

Please check whether the outgoing transitions from Done status contains any post functions. If yes then by removing them you can achieve your requirement. If No then you can be ensure that it will not modify until its moved back to Done because as you said in transition to Done you are setting those values.
