Header (or sender) of the email caming from incoming server mail

I have set up an incoming mail server. I receive the emails correctly and an issue is created. However, in the emails, the sender is not reported( I can's read the author of the email that is sent but I can read only the body of the message). How can I find and use the from who write the e-mail transformed into usse arrives?

Take a look at the configuration of your incoming email process - is it a JSM email channel, or a Jira email "handler"?

Both read the sender, but do slightly different things with them, and that is configurable.  The standard email handler for example, tries to import the sender as the reporter of the issue, if configured one way.
