Is it possible to have a different set of fields within the same project for a specific issue type?
Example: Project X uses issue type Task. There are 3 different boards in project X.
In the first board, task needs to have a field called "Reportable to Y", on the second board we don't need this field but instead we need "Reportable to Z" etc.
Is this doable?

No. A single issue type is associated with up to 3 different screens in a project. These screens are used when you:
Other than that, you cannot display different fields on the same issue type in a single projects.
Boards are - in a way - just views that display these issues differently. But they have no impact whatsoever on the settings for your issues. These are defined uniquely in the project your issues are in.

Thanks for the response! This was my understanding as well but I was wondering if perhaps there is a workaround that I'm not aware of.
Considering this, I've suggested to the team to use a cascading field so hopefully what I have in mind will work for them as well.

If I understand it correctly you are looking to have different screens for one Issue Type which is not possible.
Each issue type can have only one screen scheme in a project which can have seperate screens for different operations like create/Edit/View.
