At the moment I'm using the linked issues field as a field shown on my issues on our sprint board. The problem that I'm having is that I'd like it to be more specific.
At the moment it shows the issue key of all linked issues. Is there a way to create or modify a field so that I can see only what issues are blocked by or blocking other issues?
Sometimes an issue is related to 2 issues and blocked by 1. I'd like to only see the blocked by issue in that case. Is that possible?

The Issue Links panel on the Jira issue view will show all the linked issues with the link type. AFAIK, there is no feature in Jira Cloud to manipulate this.
If you want, you can use some web browser extension to hide the unwanted info using Javascript. An example of a web browser extension is Tampermonkey - do take note that this is only for the browsers with the script, which means if you add the script to hide something, it doesn't mean it will be applied to all the users in your Jira instance.
