We have plans for Jira Software and Service Management that allow archiving, but the boards we use to manage internal office management in Jira Work Management do not have that option in the projects page. Can we archive those?

If you have a Premium subscription, yes you should be able to Archive JWM projects.
Are you getting an error? Or is there just not an option to Archive? Are you going to Settings > Projects and then clicking on the 3 dots menu to the right of the project?
There does not seem to be an option to archive in JWM just in software. Here are some pictures. The JWM only give project settings options while Jira software has "Move to trash" and "Archive" as options.
