Hey,
I'm trying to use Created vs Resolved graph, but all resolutions which I'm using are marked as resolved, so every created issue is Resolved by default.
I can't create an issue with resolution Unresolved, I can't see it in resolutions.
How to create a resolution which would be read as Unresolved?

The simple answer is "stop resolving the issues when you create them".
The problem is that the resolution field will always be set if it is presented to the humans on a create, edit or transition action, and one of your admins has made the mistake of putting it on a create or edit screen.
You'll want to get them to remove it from all screens, other than the transition screens that appear to explicitly ask for it when closing/resolvving an issue.

The resolution field tells Jira if the issue is resolved or not, and if you have that field added to a screen it will automatically be a required field. If you do not have it on your screen, make sure that it is not set as part of a post function until the issue has reached a done status. Have a look at Best practices on using the "Resolution" field for more information.
