Hello,
I would like to update the resolution status options but only for some of our Jira projects. is that possible to have different resolution statuses depending on projects? If yes how do you do it?
For example I want to have status = done and resolution status options to be "done", "Won't do", "Duplicate",... but not all the options to show for all our Jira projects

Yes this is possible. You would need to use a workflow property on the desired transitions. It would work like this:
