Hello, I'm facing a problem that I can't set the priority when I create a task, there is no such function in the field settings, what can I do about it?

Welcome to the Atlassian Community!
You might want to add "Priority" field in Create Issue screen. Please refer this link to know how you can add fields to your Jira project's screens.
In addition to this, you might also want to make sure that the Priority field is on the Edit screen for your tasks as well, or else you won't be able to modify it once you've created it.
