Would like to add in past issues into Jira and manually include the Open and Close dates.
I can add a comment that includes the dates for reference, but I would like the option to manually put in an Open and Close date.

It is not possible to update or change the Created Date (Open) or Resolved Date (Closed). You would need to create custom fields for those values and populate them when you upload the issues.
You will just have to add 2 custom date fields and add them to your project.
