So, i want to cleansing the project in my Jira, but before we delete the project, is it possible to backup the project first, so if we suddenly want to open the project again, we can do it?

You can also use a third party app such as Revyz Data Manager for Jira which provides for full and granular backup and restore capabilities. Full transparency, I am an advisor for the app.

Single projects can be now exported/imported with the Cloud migration tool: Cloud-to-cloud migration | Atlassian Support
You find it under admin.atlassian.com > Settings > Data Management
You can export/import all or selected projects.
If you only want to backup issues, you can export them as csv from the Issue search.

It's always a nice idea to back up data, as you never know when you'll need deleted project, issue, etc.
To backup Jira projects, you have a few options:
1. Use Jira Backup Manager to manually back up the entire Jira instance https://support.atlassian.com/jira-cloud-administration/docs/export-issues/

Here is the way to backup the whole instance .
You cannot back up single projects, which is not supported natively by Jira.
