Is it possible to adjust the Velocity Chart

I see now always  7 sprints,  can you also set this to e.g. 12 sprints

The Velocity Chart will show only the last 7 sprints and it is not possible to include more as mentioned in this Documentation
However if you want you can try this add-on Great Gadgets for Jira Cloud to visualize certain number of sprints using Team Velocity gadget.

That is not possible with the out-of-the-box features of Jira.  There are several open suggestions to make the number of sprints configurable, such as this one from 2012, which you may watch or vote for to see progress: https://jira.atlassian.com/browse/JSWCLOUD-6034

There are Atlassian Marketplace addons to show more / different sprint reporting which can be investigated.  I recommend also considering why the team wants to see more sprints to learn how that will help them; looking at very old data may not accurately reflect how a team works "now" and so the comparisons may not help as expected.
