How to restrict Sprints & Components to a project.

When creating a task, if you go to add a Sprint or a Component, you can see all sprints and components across ALL projects. We would like to restrict the list of sprints and components to only those in the project the new task is for.

Sprints are not project objects, there is no direct relationship you could use to do this.

Components are though, and there's no way to add a component from a different project to an issue.  I am not sure where exactly you are seeing this full list of all components when creating, I only see the list from the current project when I hit "create"
