In my team we have subtasks for each ticket for definition of done but if we decide we want to move a ticket to 'won't do', we have to manually move all of the subtasks to won't do also.
Is there a work-around in Jira Automation to move all of the subtasks too instead of having to do it manually?

If you are moving the parent to Won't Do - is that the Status you are moving it to? Or is it the Done status and you are setting the Resolution to Won't Do?
If you have a Status of Won't Do, you can create an automation rule with a trigger for when an issue is moved to Won't Do. Then add a Branch for Sub-tasks. Under the Branch add an action for Transition Issue and select the Won't Do status.

If it is a Status of "Won't Do", you can find a template for that type of rule in the Automation Library.
When you go to the Automation page click on Library.
In the Library are many template rules. You would want this one:
They use Done in the template. You would need to change that to "Won't Do"
