We would like to if it is possible to audit custom fields in Jira Software.

What we need is to be able to filter by a custom field to see when and who has changed the value of the field or can export the "Historial" (attached).

In the case, you described I can suggest trying the Issue History for Jira app if you're ok with it.
Here you can add any standard or custom field to the grid and monitor all changes (Column manager option). Export to CSV or XLS files is available.

Keep in mind taht you need JIRA Administration permission to view all these information.
