We are currently running Jira, Confluence, and Bitbucket.   We would like to test the new Jira Service Desk application, however if we install this in our existing environment, is it something we can remove easily once the trial period is over, or is this something better deployed in a separate Jira instance?

you can certainly do it either way and delete the test projects afterwards if on same instance. IMO, if you simply want to play and get a feel for it first and don't want to retain any of your work I would do a new instance as it is cleaner. Once you decide to proceed then you can simply add JSD as an application to your current instance. If you are on cloud is even easier.
