We have a few organisation. Some are internal and some are external. Is there a way where the portal field is visible or hidden based on reported in the organisation ?

Thank for the suggestion. However, currently Service desk is on three agents license but Jira on 100 users. So might be costly

Just to confirm, you would like it so a field is hidden if a customer from organisation A creates an issue, and the same field is visible if a customer from organisation B creates an issue?
I do not think this is possible as it is not referred to in the documentation. My suggestion would be to copy the original Service Desk Project and transfer organisation B over to the new Service Desk Project. You could configure the field visibility for that particular organisation.

Is troublesome for support team to monitor two projects. Is there alternative? Reason is I have a client field which allow internal organisation to view only.
