How can I restrict the amount of data being exported to Excel from one Jira service desk request.

I am creating a travel request form. In the form there is the option to enter the data for Accommodation, Flights, Airport parking, Taxis, Trains and Car hire. However the only data I'd need to export is Flights, Taxis and Accommodation. Is it possible to only Export those 3 items from the Form regardless if the other items are filled out? At the moment the Export gives me all the data values even if they're not filled in.

Welcome to the community.  If you are exporting data from JSM using JQL search, then you can control what column(s) that you want to display against the search results.

Once you selected the columns that you want to be displayed, then you can click on Export and select "Export Excel CSV (filter fields)" export option.  You will see that your CSV file will only contain the fields (columns) that you wanted.

I can filter by columns but what about the data inside a form? I cant seem to narrow down the data that's included in that.

It is my understanding for "FORMS" setup, it is not possible at this time.  I would recommend you contact Atlassian Support (https://support.atlassian.com) for additional support on your ask.
