We're new in Jira and we are trying to figure out how we can generate or track a time logs on each ticket. I know there are some add-ons that will help us with billing and invoices but we would like to know first if we can achieve this without using any add-ons.

Jira natively comes with time tracking. You may need to turn it on and give permission for agents to log work. If you want this to be more sophisticated to track by Accounts, you can look at Tempo Plugin.
