Can I configure the /jira create command in slack?

I created a project in JSM  (FooBar) and i am trying to have an / command configured in slack so that everyone can open an incident under Foobar project. 
When i use the '/ jira create' command in slack i see listed all  the projects,  the user is also asked to select the issue type 
I'd like for the project to default to Foobar and the issue type to default to Incident

Is this possible?

Additionally the user gets displayed over 20 optional fields (severity, source) that i'd like to remove but i cannot find documentation on how to do that.
