I am not sure if it is a limitation in my user profile, but I would like to limit the possibility of creating ideas for a few projects only and not the full list it opens with the dropdown menu "Switch projects".
Is it feasible or should I live with the full list of projects and therefore the risk of creating an idea in a project that may not be the right one?

If a JPD project has restricted access such as set to Private, users will not be able to open the project. In turn, the project would not appear/be selectable when trying to create a new issue or idea.
Having said that - depending on the user's JPD role would also depend on whether or not the project appears in the Projects tab. For example with some quick testing:

Private - Only the users you specify can open the project.
Limited - Everyone can open the project but only users you specify can act as creators.
Open - Everyone can open the project, any user with product access can act as a creator.

A colleague of mine also mentioned another solution might be to create a custom role which doesn't have the create idea permission selected, and assign it to your user(s) to limit them:

Thanks, so the only way to limit the visibility of certain projects is to make them limited and manage the user access. Correct?
The "Switch project" dropdown menu provides access anyway to all the projects (not just the JPD ones) we created in Jira. Then this can be a problem as if they select one of them, a user can create a new Story/Epic in those projects
