Welcome to the community. One thing for you to check will be to ensure your custom WF has been published. If not, then even though you see the WF of those statuses, they will not be available for your specific project.

Do these checks
1. Confirm whether HOS Workflow Replacement Workflow is published. Your screenshot clearly shows as a Draft
2. I think you have Board Administrator permissions, so once the Workflow is published then you can see the status, which can be mapped to the respective column that you select.
Note: If the workflow is not published, then it will take the previous version of the workflow which may not have the statuses which you want to add

Assuming your project settings > workflow utilizes "HOS Workflow Replacement", you should see the changes. :)

You should check your board and make sure it is associated with the project that has the issue which contains the workflow you are sharing. If it is then check the boards filter and ensure that it has the issues you want and that those issues are associated with the workflow you shared. The workflow you are sharing is not associated with the board hence the reason everything looks different.

At the bottom left of your screen you will see that your Jira environment is managed by a company. Probably the company you work for. You will have to request this from the administrators.
