I opened a template recently with a table requesting different types of information. Pre-populated in that table were prompts like "Type // to add a date." These prompts are light grey and only show up in edit mode. They don't appear when viewing the page as a normal reader.
What are those called? "Prompts" hasn't been a useful search term.
How do I add them to tables I've made from scratch?

Those are either variables or placeholder text. Variables will prompt you enter text into them when you create a new page, and placeholder text can be used to add instructions. Check out this KB for more information.
@hailey_clement_foodsconneted_com Note from the page that @Mikael Sandberg linked to that you can only use these features on a template that you create new pages from; you cannot put them on regular Confluence pages.
