Restricting access for one person

I have a document that I only need to restrict one person from the doc. Is there a way to do this without having to add everyone minus this one person?

No, you have to remove whatever is giving them access to everything else you don't want them to have.

Do you mean Confluence Page? 

If they don't have admin permission, you can set the page permission on the restriction you want. 

Navigate your page and click this key icon. Choose "Viewing and Editing Restricted" and add the person you only want to see and edit the page.
