It looks like due date and assignee are both black on my task report.

What do you mean by "black"? Can you share a screenshot?
For those that didn't quite pick the solution up from the description (like myself) - I found it here:"type slash slash (e.g. // ) at the end of the task and you'll see a date picker pop-up. If the task has one of these dates at the end, it functions as a due date."
Meant blank and I figured it out, thank you.

I used the slash and incorporated the date option on the original meeting notes
