Can Confluence be used to host customer-facing docs?
Our org uses Confluence and JIRA. But we use it internally. We are looking for a documentation solution where we can host all of our customer-facing docs. Does Atlassian offer a hosted docs solution?

it depends on your requirements for the documentation.
If you are already using Confluence, you probably know what you can do with confluence and what not.
So if that fits for your documentation, the question is, should it be public to everyone or should it be restriced. If it is ok, that it is public to everyone, that is no problem. If you want to restrict it , every customer must be licensed/be included in the subscription.
You can use either the Atlassian Cloud offers, use your existing confluence or ask an Atlassian Partner, if they can host it for you.
We want it completely unrestricted-- we want our help crawled by search engines and our help found online. When you say the Atlassian Cloud offers can meet this need, can you please be more specific?

in that case I think a cloud subscription (https://de.atlassian.com/software/confluence/pricing) will do. You can set spaces to be accessed anonymous and then it is available to the public and should also be indexed by search engines.
You just have to subscribe for the number of users that will create/edit the documentation, for the customers, you do not need a subscription.
