I'm trying to allow a date to be selected when in Page view. I can insert a Date Picker when editing and it functions properly but I want that same functionality when it's just on the page but it only shows a static date and does not allow me to change it. Is there a way to allow the Date Picker to work when you are on the Page view?
I cannot believe you can't use a date picker in View mode.
I understand that it may seem 'wrong' to be able to edit in View mode. However, I want the date picker to be usable by people without them editing the whole page. The date picker is what I am using to enforce valid dates, so I choose date picker when I am creating the page - hoping that like @Scott Childs someone can then view the page and update a date field.

I want to use it as a verification date so that when we verify items, we can change to the correct date it was verified without having to go into the edit mode. Similar to how the checkbox works and is "checkable" when in the page view.

@Scott Childs I am afraid you can't do that with a view mode from Confluence page
The checkbox you are seeing is from the confluence-inline-task plugin, that is for ticking a task complete / uncomplete
If you want to have something similar with date picker, you have to write a plugin to achieve your need
