I want to be able to get a notification for all of the PRs in repositories in my organization. It's quite hard as we have about a ~100 of those.
If possible I would also like to be subscribed to future repos as well.
Is there an easy way to do it?

Are you using Bitbucket Server or Cloud?
You could get a list of all the open pull requests in a certain repo, but afaik there's no way to bulk subscribe to all of them. If you're interested on getting the list, you could use this endpoint from the Bitbucket Cloud API.

Regarding your second question, to be subscribed to new repositories you'll need to have at least read permissions to such repositories. In that case, you can create a user group and grant it permissions to all newly created repos, then add yourself to that group. You can learn more about this at Organize groups for your repositories.
