Using the Issue Details template, I need to add a column displaying some custom incident fields. (field id's known) TBH I'm in the middle to 2 go lives and up against it, I bet this way is faster.

Jira custom fields will be in the Jira "Issue field" table. You can follow the steps here on how to query Jira custom fields.
Only one custom field can be added per query, given how the Jira "Issue field" table is structured, so creating a custom column for your custom field in your Data Lake schema may be a more scalable approach if you will be using these columns frequently across charts.
