I am not seeing the Workflow option under my project settings to associate my workflow scheme. Is there a workaround?

Are you using a Team Managed project or a Company Managed project? It will say at the bottom of the navigation pane on the left.
Company Managed project configurations are managed with schemes. Documentation concerning modifying the Workflow and Workflow Schemes starts here:

Team Managed project configuration do not use schemes. Schemes are a device that supports sharing configurations between projects. Team Managed projects are designed to be stand-alone, and so the configuration choices in a Team Managed project cannot be shared. I am not sure what you mean by "work around"? Work around what? If you don't have the workflow option in your project settings then the system is working as intended and either
okay, I am new to Jira and I do think I'm an Administrator (just set up my free trial today to get more acquainted with the software). So what I am trying to achieve is to customize the workflow for my needs. Can you please guide me or direct me in the right direction. Thanks!

@Nic Brough -Adaptavist- Does this mean it is not possible to have different workflows (assume : one workflow for each issue type) in the same project, when the project is a team managed project ?
In my team managed project , I have same workflows for all issue types (Story,epic,Bugs etc.,)
Now , I am trying to edit workflow for Bug type alone. When I modify status in workflow for Bug issue type , I notice status is getting update for other issue types as well.
How to overcome this problem ? Kindly suggest.
No, it means that team-managed projects do not use workflows via schemes.
TMPs can have different workflows for each issue type in them - go into the issue types, edit one of them and use the "edit workflow" button at the top right. When you commit changes to a workflow, Jira will ask you which issue types to make the changes for.
With CMP workflows, they share status from a global list. When you change the name of a status, you are changing a global setting, not the workflow. Don't rename status when you are editing a workflow, create new ones and associate them with the steps.
