I guess I could rename each project that is old so it starts with an x. Then it would appear at bottom of alphabetical list. I'd prefer just to hide them.

You could use categories and then open projects by categories. You can read more about categories here:

Create a permission scheme without browsing rights and assign that scheme to those projects
