I'm a Jira admin trying to set up a QA bug life cycle, but where can I set that up?

We're in the midst of getting teams to transition over to Jira and I've been mapping out the bug life cycle. On creating a new project, there doesn't seem to be a spot to correctly map out the bug life cycle, plus implement auto-assigned issues.  Please help!
