Is it possible to make a test issue type a sub-task within 1 project while still keeping it as a Task item in all other projects
We are using the zephyr plugin for Cloud for our tests and would like to keep that functionality.

No, that is not possible. An issue type in Jira is either of the Sub-task issue type or of the standard issue type. They are either one or the other.
I would recommend to create both issue types: one standard and one sub-task.
