I love the product but I no longer need to hava a JIRA for my project. I cannot figure out how to cancel the account so that I stop being billed.

Go to Manage Applications in Billing. If you want to stop JIRA you can just stop JIRA; if you want to cancel the entire site you can do it from there too.
