The field that enables:

Remaining Estimate
Time Spent
Original Estimate

is Time Tracking.

You can choose whether or not to show the three of them, with no more granularity than that.

You can hide Time Tracking by any of these methods:

removing this field from the screens set on your project(s)
hiding this field from the Field Configuration set on your project(s)
disabling Time Tracking totally on your instance:
