I cannot find a link or page that provides a way to switch from the demo to a paid account.
Once your evaluation is up, OnDemand will renew at the monthly rate and your credit card on file with your account will be charged - the only difference between the evaluation and the paid instance is the payment.
How do I change the credit card number before then?
The card on files no longer active.
Login to your https://my.atlassian.com account, expand the line item for your OnDemand instance, click "Edit Credit Card"
