You can't change that because full name is required for specific reasons. If you do not want your full name to not be visible, just put your initials. That works. You can read more about this here: https://support.atlassian.com/atlassian-account/docs/update-your-profile-and-visibility-settings/
Thank you! The doc was confusing because "Anyone" was the only option and it wasn't obvious how to edit the name, but after your message I realized that I could edit that too.
