At the moment the Project UI allow just to link an existing channel. It would be great to automate this task.

You are referring to Atlassian Home (former Atlas), not Confluence.
Atlassian Home has no automation functionality and also no API option.
There is an open feature request for this: ATLAS-140

I don't think there's an open suggestion related to this requirement.
I'd recommend reaching out to Atlassian Support and discussing it with them. Support staff can, potentially, create a new feature suggestion based on your requirements.*if they do so, feel free to share the feature suggestion link here

I don't this this is possible as Forge is the platform to build apps, not for making single web request.
