I have a gadget displaying when tickets changed status. The status includes custom options. 3x tickets were changed on 20 Feb but the graph shows these for the week 3 Feb. How can I rectify this?

That is not a built-in gadget, and instead appears to be from a marketplace vendor or custom-built by someone in your company.
I recommend contacting your Jira Site Admin to identify the vendor / author, and then checking with their support team for assistance.
